Who chases the late ones?

Galaxera does, by text and email, on your schedule and in the tone you pick (friendly, direct or formal). A manual chase pushes the next one aside.

What happens when someone pays?

Mark it paid and the chasing stops that second. Your bank details are on every invoice, and the customer can tap to tell you they've sent it. You confirm the payment and the chasing stops. If they pay by card through your connected Stripe, it marks itself paid. If you're on Xero, a payment recorded there marks the invoice paid here too, so you're never chasing something that's already settled.
