Who actually asks for the money?

Galaxera does. Overdue invoices get chased by text and email on the schedule you set, in the tone you pick: friendly, direct or formal.

What else goes out on its own?

Booking reminders go by text, 24 and 2 hours before by default, between 8am and 7pm. Review requests start once you add your Google review link. Switch either off in Setup.

Will it keep chasing someone who's already paid?

Marking an invoice paid cancels the rest of the sequence on the spot, and anyone who's opted out gets no more chases, reminders or review requests.
